So I've never rooted my Fascinate (SCH-I500) before but I figure it's about time.  I would really like to be able to tether and remove some of the bloat.  I've also heard that Netflix app doesn't work on the Fascinate unless using Gingerbread.

I'm actually eager to try Gingerbread, but I was wondering if anyone knows which Roms have had the most success with this.  If I do this, I'd prefer to use something well tested stable--this is my only phone and my only internet connection for the time being, and I'm not sure how polished a GB Rom would be compared to Froyo.

Also, anyone care to tip me off to what ASOP is?

You have to be careful when selecting a Gingerbread rom right now because most gb roms have the "sd card bug". Which may ruin your sd card and everything on it.
I was interested in installing Netflix on my phone too which brought me to install CyanogenMod 7 on it. It seemed quite buggy when I installed it but after a couple of days it leveled out. It's my daily driver and if you try it I'd say give it about 3 days or so for the phantom ringer to disappear and the occasional unresponsive buttons.  Once you learn how to root and install new roms it is really easy to downgrade back to what you had and near impossible to hard-brick this phone so don't worry our panic if something doesn't go right. The AOSP and CM7 both don't have the sd card bug either.
AOSP is Android Open Source Project and means it's a rom built based on the open source platform. It's essentially linux (they all are) but google released the  "foundation" of the rom for developers to create their own software. It's a little different interface from the what you have on there now and from what I've seen it kinda resembles an iphone-type gui.
